A Sweet Punch theme for November 2011 is the PUDDINGS - Hot/Cold.
Divya of Easy Cooking is hosting the event this month and she has chosen Coffee and Chocolate Pudding.
The recipe says to serve this delicious self saucing pudding with a generous scoop of Vanilla Ice cream.
I have baked this with all the ingredients on hand and did run out of brown sugar in the end. However, there is demand from the family to bake this another day.:)
Ingredients :
1 cup flour
2 tsp baking powder
2 tsp cocoa
Pinch of salt
½ cup brown sugar
2 tbsp butter, melted
½ cup milk
1 egg, beaten
50g cashew nuts, chopped
Method:
1 Preheat oven to 180°C.
2 Sift together dry ingredients.
3 Stir through butter, milk, egg and cashew nuts until well combined.
4 Spoon batter into bowls / ramekins.
5 For the topping - sprinkle over brown sugar and cocoa as topping then pour over coffee(about 1/2 cup black coffee).Do not stir.
6 Bake for 20 minutes.
7 Dust with cocoa powder or cinnamon and sugar; serve with vanilla ice cream.
A dollop of Vanilla ice cream with chocolate sprinkles , even drops of chocolate sauce or syrup should do wonders.....A scoop of ice cream did not look sufficient .......they asked for more !
