This recipe was shared to me by Rangika of Baking Art. And every time I baked it i am loaded with compliments.
Ingredients:
300 gms Sugar
3 Sticks Butter
275 gms All purpose flour
4 large Eggs
1.5 Tsps Baking powder
2 Tsps Kahlua
2 Tsps Vanilla Essence
1/2 Tsp Lemon Essence
5 Tsps Cocoa Powder
3-4 Tablespoons of Heavy Cream
Step 1: Scale the ingredients.Sieve the flour and baking powder 3 times and set aside.In a stand mixer beat the sugar and butter until creamy.Add Vanilla essence & add eggs one by one. Once they have all blended well - reduce the speed to min., & add flour spoon by spoon(else, it could be folded as well)Divide the batter equally into 2 bowls.
Step 2: In bowl 1, add the lemon essence and mix well.Lemon essence could be replaced with a teaspoon of lemon rind too.
Step 3: Mix the cocoa powder in the heavy cream and add Kahlua to it.( Kahlua can be replaced with a teaspoon of Coffee essence)Add this to bowl 2 and mix well.
Step 4: I have used a Bundt pan here.Coat the pan with butter and dust with flour.
Step 5: Use an ice cream scoop here to pour out the batter alternating from bowl 1 and bowl 2 as they form the base layer. On the next layer - scoop out the bowl 1 mix onto the bowl 2 mix and place them accordingly until the mixture is used up completely.
Step 6: Use a skewer/fork to make swirls in the mix so that the white and brown blend into each other.
Step 7: Set to bake in a preheated oven at 180 degree Celsius for about 45 minutes.
