Banana Stem Stir Fry (Thoran)

Banana Stem - This a miracle stem is loaded with many medicinal properties.Many claim to substantiate this fact that it lowers cholesterol, helps in kidney ailments, aids in a good detox , treatment of stomach ulcers so on and so forth.
I include this in our diet mainly because it is very tasty. I do not give the family any choice as it might help us with some of its medicinal properties.

This stem is easily available here&there is a process involved in managing this piece of stem as shown in this collage.And you got to be real quick:)
 The finely diced pieces of stem is soaked in a bowl of water with a teaspoon of vinegar. You can use lime juice or yogurt or buttermilk in water to soak the pieces. The purpose is to stop the pieces from turning black. If using vinegar, make sure you drain the pieces well and re rinse it in a bowl of water.
Heat oil , add half a teaspoon of mustard seeds, a teaspoon of urad dal ( black gram split) and 2 red chillies whole. When they splutter add chopped onions. Fry well. Now, add the squeeze drained ( not sure if the choice of words are right :P ) pieces of banana stem with a spoon of turmeric powder and salt as appropriate. Stir well on high flame till the water dries up. The pieces will remain crunchy anyway............ Garnish with grated coconut and curry leaves.
